April 18, 2008 10:20 PM: Alinea, PrimeHouse, Vermillion and Chess?

May 17-20, I'll be in Chicago for the National Restaurant Association meeting. It's a gigantic convention of all facets of the food industry. There'll be suppliers, customers and everything in between in one place. On my side of the industry, it's a good chance to get away from work, wine and dine the customers and enjoy ourselves. We work a lot and we work very hard. In a typical day, I'm there for at least 11 hours or more and I rarely sit. It's hard, but it's fruitful and challenging....

April 17, 2008 08:47 PM: The Race to Save the Cougar Ace

From Wired: Salvage work has long been viewed as a form of legal piracy. The insurers of a disabled ship with valuable cargo will offer from 10 to 70 percent of the value of the ship and its cargo to anyone who can save it. If the salvage effort fails, they don't pay a dime. It's a risky business: As ships have gotten bigger and cargo more valuable, the expertise and resources required to mount a salvage effort have steadily increased. When a job went bad in 2004, Titan...

April 16, 2008 09:32 PM: Perhaps We Had Really Good Seats

Unofficially, the company has some seats behind home plate. We don't get at them very often, but I was lucky enough to get them for Monday nights game against the Angels. While I'm not an American League fan at all, it was still pretty cool to be so close to the field. It's still hard to really pay attention and the game does fly by, but the ability to talk trash in a whisper to a player 4 feet in front of you is pretty awesome. There's some definite...

April 10, 2008 09:11 PM: Dear Storm: I Was Asleep

Crazy storm last night; but this picture makes me laugh. This stupid tree almost fell through my bedroom (directly behind the fallen tree) window, but instead, fell on this car. I like to think that it's karmic-punishment for parking in a handicapped spot illegally. Anyway, it was a freaky storm, but the Fleeg survives....

April 5, 2008 07:02 PM: Coming to a Vegas near You...

Our team cooked dinner last night for the MGM group that was visiting our meat-cutting facility. It was their first visit to our Texas operations, so we threw out all the stops to impress upon them how culinary-driven our r/d team really is. The food came out really well and these guys were blown away that a manufacturing team could drop the awesomeness on them so easily. It's nice to have a certified master chef, who is also the exec chef of the Bellagio telling you how wonderful the...

April 3, 2008 10:16 PM: two months? what?

I can't believe this was taken two months ago....

April 1, 2008 06:22 PM: April Fool's Day revived...

This day is a big waste of time because it's never funny. It's not satire, it's lame attempts at tricking people without being truly creative enough to really pull it off. People make it too complex to where it's overwrought with details and sheer stupidity. somee cards, however, did a good job (as usual), with their online e-cards....
