
A few weeks ago, I helped out a friend with a project for class. It's a better (i think) method of cooking a turkey than what has been told to us for years and years. To properly cook the Turkey thigh, you have to cook the hell out of the breast, resulting in dry, flavorless meat. We've all had it and no matter how good a cook your mom is, the turkey is never as good as it should be.
Chef Garnero taught us this method during my back of the house St. Andrew's Cafe time and I thought I might pass it on. The basic method is to remove the thighs, debone them and stuff-and-roll them up. They'll cook more evenly, can cook separate of the breast and will be delicious with the included stuffing recipe. My friend Ben did the demonstration and I took the photos and put together the packet.
But in my opinion, turkey is a lunch-meat and should stick with what it's good at...
